When having friends over for a meal, people usually like to try new recipes and, of course, want something that's original and up-to-the-minute, but more importantly need to be sure that these recipes are practical – i.e. that they have been carefully tested and so are guaranteed to work, and that as much as possible they can do all the work ahead, so they'll be able to spend more time with their guests. All the 100 plus recipes in Good Food for Friends have been devised and tested to deliver in exactly these ways.
The book is divided into chapters on Soups, Starters, Lunches & Light Meals, Fish & Seafood Main Courses, Poultry & Game Main Courses, Meat Main Courses, Vegetables & Salads and Desserts. Each chapter also contains at least one masterclass, examining in detail an important and representative recipe, such as the Parmesan Soufflés with Almond and Anchovy Sauce in Lunches & Light Meals, complete with useful step-by-step photographic sequences. There are also regular features on important areas and techniques, like the buying and choosing of fish, garnishing, roasting and casseroling, and making important basics like perfect mashed potato and custard.
All the recipes have helpful symbols indicating preparation time, whether or not the dish can be frozen, its degree of difficulty and if it is possible to scale it up for larger groups. Throughout there are also lots of hints and tips on shortcuts and ingredients, as well as guidance on appropriate equipment, where necessary, and generic wine notes for each dish.
The book finishes with a section providing advice on planning dinner parties, complete with the golden rules of menu planning and some suggested menus to suit various situations built on the recipes in the book. Bavaroise aux Fraises
Rub one pound of strawberries through a fine wine sieve or a masher. Add to the pulp thus obtained three ounces of sifted sugar and half an ounce of gelatine first dissolved in a gill of boiling milk or cream, and then left till cool. Next add half a pint of well-whisked cream or half a pint of custard made with the yolks of the eggs only. Whisk all well together, then stir in the whites of two eggs, whisked to a firm froth, and use the mixture to fill a wellgreased mould. Place in rough ice till set. Another and an improved method is to add two ounces each of chopped glacé cherries, and candied peel or angelica, to the other ingredients; but this, of course, is a matter for individual taste to decide.
