Cookery and recipes - Coming Home by John Burton Race
French Leave followed John Burton Race, wife Kim and six children to the South
of France. The result was an intriguing mix of the chaos of family life with one
man's determination to find his culinary roots. What emerged from that year was
a man with a different outlook on life. His family now mean even more to him and
he has finally decided to turn his back on the Two-Star Michelin world he
inhabited - for good. John and the family are moving to rural Devon so he can
run a small hotel and restaurant. No more chasing Michelin stars, this will be
family foods that anyone can cook using fresh ingredients from the surrounding
area. Tied in to another prime-time Channel 4 series, directed by Pat Llewellyn,
this cookbook will have a strong resonance with the reader. No fancy recipes,
just straightforward well-cooked food for everyone to enjoy. (Source: Amazon UK 12 April 2006)
John Burton Race's previous cookery book, French Leave, based on the hugely popular television series, established John as a best selling author as well as hugely talented chef. Now, tying in to the prime-time television series, comes this wonderful cookbook, packed with mouthwatering recipes and irresistible ideas for family meals, inspired by John and his family's move to Devon, where he now runs The New Angel restaurant in Dartmouth.
Using the very best local produce - from the delicious fish and shellfish, delivered daily by boat to the restaurant, to the Devon Ruby beef bought direct from the farm, and succulent lamb, venison and game fresh from the moors - John has created 150 brand-new recipes that don't call for complicated ingredients or hours in the kitchen.
The simple and delicious dishes include imaginative twists on classics - Moules Marinieres become Mussels in Scrumpy Jack - while Brill with Seed Mustard and Green Peppercorn Sauce makes for a special family dinner. John breathes new life into the Sunday roast with Leg of Lamb in Salt Crust and succulent Roast Loin of Pork with Prunes and Apple, as well as the alltime favourite Whole Roasted Chicken with Sage and Onion Stuffing. And there are plenty of inspiring ideas for casual entertaining, including Roasted Duck Breasts with Raspberries and Blackened Mackerel with Herb Mayonnaise. The wonderful dessert selection features delectable Raspberry Meringues, wicked Fried Bread and Butter Pudding, and smooth Coffee Caramels. There are also tasty vegetable dishes (Mushroom Risotto and Tomato Tart), as well as sweet and savoury home bakes (Brownies, Eccles Cakes, Muffins and Anchovy and Parmesan Straws) to tempt adults and children alike.
With stunning recipes and lavish photography throughout, this book is set to become a firm favourite with food-lovers everywhere. (Source: Front Flap)
John Burton Race was born in Singapore in 1957. The son of a British diplomat, John spent his formative years travelling the globe, experiencing a multitude of cuisines. His culinary career has encompassed sous chef at Le Manoir aux Quat Saisons, Oxford and Head Chef and Manager of Le Petit Blanc, Oxford. Later he opened a restaurant of his own - L'Ortolan in Berkshire, where he gained two Michelin stars. The Landmark Hotel in London followed, where he again acquired two Michelin stars. In 2002 he left London to spend a year in southern France with his wife Kim and their six children. Their experiences in France formed the basis of the enormously successful television series French Leave. The book (also published by Ebury Press) accompanying the series became a bestseller.
John now runs The New Angel in Dartmouth, formerly Joyce Molyneux's legendary restaurant, The Carved Angel. The restaurant opened to acclaim in May 2004. (Source: Back Flap)
